Lime Wine Scallops

12 Large Scallops
4 oz. White Wine
.5 tsp. Sambal Olek
1 ea. Lime Juice
4 oz. Roses Lime Juice
2 Tbsp. Butter
2 tsp. Cilantro
2 tsp. Brown Sugar


Heat Sautee pan with 1 Tbsp. Olive Oil, Season Scallops with Salt and Pepper. Sear Scallops for two Minutes on each side on med. Heat. Set Scallops aside and deglaze pan with wine and the remaining ingredients except butter. Let sauce reduce until syrup like consistency place scallops back into pan and add butter turn heat off and stir until butter melts. Plate Scallops and pour sauce over scallops.
